Soul Fly started with one stubborn truth: great pizza begins with better dough. Mama Soul learned to make it from her grandmother in Italy — a slow, patient method that honors fermentation, time, and taste. That recipe came to Rexburg with her and became the backbone of every pie we serve.

Heritage Dough, Real ingredients, & Made-to-order

Our dough is an old-world recipe that ferments slowly, so it develops depth and becomes easier on digestion. It contains gluten — intentionally — and tastes like the kind of crust you remember.

No fake cheese blends, no filler. High-quality cheeses, house sauces, responsibly sourced toppings where possible, and local touches (yes, local honey — you’ll thank us).

Our Process & Artisanal Dough

Great food takes time, patience, and a little bit of soul. Soul Fly Pizza’s pies are loved from the very beginning of the process.

Our signature dough is cold-fermented between 48 and 92 hours, bulk-fermenting until the perfect moment before being balled for relaxation and proofing. Every pizza is hand-pressed, tossed, and built to order—and yes, the dough even likes to listen to Rat Pack classics.

Once it hits our 700-degree Marsal oven—the legendary style made famous in New York City—it takes just six to nine minutes to reach perfection. The result? A light, airy crust with that classic, coveted New Haven char.

Eat local, play local. Beginning spring 2026, Soul Fly will offer paddleboard rentals so you can pair a day on the water with a hot pie. It’s a small, perfect way to slow down and enjoy this place we call home.
